How we work

We mill on a Apollo two-roller every morning and mash in on a Premier Stainless 10 bbl steam-fired brewhouse.

Lagers ferment cold for six to ten weeks. IPAs ferment 14 days and dry hop for three. We do not rush.

All beer is canned in our taproom on a Wild Goose duo or sold direct from the brite tank to the taproom.

We self-distribute inside Buncombe County only. Most of our beer is poured within 600 feet of the brewhouse.
Our promises
We brew six lagers a year, four IPAs, and let everything else move with the season. Lagers get six to eight weeks. We do not rush.
The taproom runs on Carolina Solar, our spent grain feeds a hog farmer in Madison County, and our packaging is fully aluminum and recyclable.
Three founding owners sold a controlling stake to our staff in 2023 through a real ESOP. Eleven employees, eleven owners.
